7 Minute frosting without the double boiler

As a kid, I LOVED it when my mom frosted her cakes with 7 minute frosting...full of sweet marshmallowy goodness.
Most recipes for this frosting require beating the frosting over a double boiler for 7 minutes. Unfortunately, I have a Bosch mixer which won't let me do that.
This great little recipe still gives you that great taste and texture, without the double boiler.



2 egg whites
1 c. sugar
1/3 c. water
1/4 t. cream of tartar
1/8 t. salt
1 t. vanilla

In mixing bowl, beat egg whites until white and foamy. They should form a mound, but NOT peaks.

Set aside while preparing syrup.

In saucepan, combine sugar, water, and cream of tartar.  Bring to a boil and continue to cook and stir until the sugar is completely melted.

Turn on mixer and begin beating eggs whites again. Remove syrup from stove and in a thin steady stream, slowly pour into egg white mixture.

Continue beating until stiff peaks are formed.
Mix in vanilla.

Spread over cooled cake or cupcakes.

  2. Thank you!!! All 3 of my children love this on angel food cake for their birthdays and I always dislike standing over the stove!!

    One little thing to correct, though. You added the vanilla twice - it should only be at the end, not cooked in the syrup.

  4. Worked like a charm! I am so thankful. I needed it for a coconut cake, and I don't have even the right bowls and kettles to make a double boiler, You can imagine that this frosting is just the ticket! SO, thank you so much!

  5. Thank you so much for this recipe. I grew up in the Dominican Republic and this is the same frosting bakeries over there use. I never thought it was so easy to replicate.

  6. Can this frosting be frozen? My coconut cake recipe calls for frosting the cake then freezing for a day or to for best result.
    It also calls for a cream cheese frosting, but I think this would be best.

  7. Thank you for sharing this recipe it is truly amazing!! I looked for it as it was one my mom used to make when we were kids and I wanted to surprise her.. I used it on a chocolate cake for a shared morning tea today and everyone wants the recipe...
