My mom who often makes this when we come into town. I love that it is so easy to grab and go and to adapt with nuts and berries and fruits for personal taste.
The following is an adaptation of my mom's recipe.
1 c. Steel cut oats
2 c. Water
2 c. Plant based milk of your choice
Pinch of salt
1 tsp. Vanilla
1/2 tsp. Cinnamon
1/4 tsp. Cardamom
1 mashed banana or 1/2 c. chopped dates for a natural sweetener
Optional: ground nutmeg, cloves, fennel etc., nuts, berries etc.
Add banana, oats, liquids, water, milk and spices to electric pressure cooker.
Seal and cook on high for 5 min, and allow for 15 minutes of natural release.
Serve with optional nuts and raisins, berries etc. and additional plant based milk.
